Swanjana Aalu
Swanjana Aalu Recipe
(Swanjana refers to drumstick pods, commonly used in Indian cooking)
Ingredients:
4-5 drumsticks (swanjana), cut into 2-3 inch pieces
2 large potatoes, peeled and cubed
1 medium onion, finely chopped
2 tomatoes, chopped
1-2 green chilies (optional)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1/2 teaspoon garam masala
Salt, to taste
2 tablespoons oil
Fresh coriander leaves, for garnish
Water, as needed
Instructions:
1. Prepare the Drumsticks:
Wash the drumsticks (swanjana) thoroughly and cut them into 2-3 inch pieces.
Boil the drumsticks in water with a pinch of salt for about 5-7 minutes until slightly tender. Drain and set aside.
2. Prepare the Potatoes:
Heat oil in a pan over medium heat.
Add the cubed potatoes and fry them until lightly golden. Remove and set aside.
3. Make the Masala:
In the same pan, add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions and sauté until they turn golden brown.
Stir in the ginger-garlic paste and sauté for a minute until the raw smell goes away.
Add the chopped tomatoes and cook until they become soft and the oil separates from the masala.
4. Add the Spices:
Add turmeric powder, red chili powder, coriander powder, and cumin powder. Mix well and cook the spices for a minute.
5. Cook the Vegetables:
Add the fried potatoes and boiled drumsticks to the masala.
Stir gently to coat the vegetables with the masala.
Add about 1 cup of water (or as needed) to create a gravy and bring the mixture to a simmer.
Cover and cook for 10-12 minutes, until the potatoes are fully cooked and the flavors are absorbed.
6. Finish the Dish:
Once cooked, sprinkle garam masala and give it a final stir.
Garnish with fresh coriander leaves.
7. Serve:
Serve hot with rice, roti, or paratha.
