Sarso Ka Saag Recipe
Sarso ka saag is a popular Punjabi dish made from mustard leaves. It's a hearty, flavorful, and nutritious dish often served with makki di roti (cornbread).
Ingredients:
* 1 bunch mustard leaves (sarso ka saag)
* 1/2 cup chopped spinach
* 1 tablespoon chopped coriander
* 1/2 teaspoon red chili powder
* 1/2 teaspoon turmeric powder
* 1/4 teaspoon cumin powder
* 1/4 teaspoon garam masala
* 1/4 teaspoon asafoetida (hing)
* 1/2 teaspoon salt, or to taste
* 3 tablespoons ghee or vegetable oil
* 1/2 onion, finely chopped
* 1/2 tomato, finely chopped
* 1/2 teaspoon amchur powder (dry mango powder)
* 1/2 cup water
Instructions:
* Prepare the greens: Wash the mustard leaves and spinach thoroughly. Remove the stems and chop them finely.
* Cook the greens: In a large pot, add the chopped greens, red chili powder, turmeric powder, cumin powder, garam masala, asafoetida, and salt. Stir well.
* Sauté the onions and tomatoes: Heat ghee or oil in a separate pan. Add the chopped onions and sauté until golden brown. Add the chopped tomatoes and cook until softened.
* Combine the ingredients: Add the sautéed onions and tomatoes to the pot with the greens. Stir to combine.
* Simmer and thicken: Add the amchur powder and water. Simmer for 15-20 minutes, or until the greens are cooked and the mixture has thickened.
* Serve: Serve hot with makki di roti or your favorite bread.
Tips:
* For a creamier texture, you can blend the cooked saag partially or fully.
* You can add a dollop of butter or a splash of cream to the saag for extra richness.
* If you don't have amchur powder, you can use tamarind paste or lemon juice as a substitute.
