Kale Chane Recipe

Kale Chole is a delicious fusion dish that combines the nutritious benefits of kale with the rich flavors of traditional chickpea curry (chole). Here's a recipe for you to try:

Ingredients:

1 cup chickpeas (soaked overnight or canned)

2 cups kale (washed and chopped)

1 large onion (finely chopped)

2 tomatoes (pureed)

2-3 garlic cloves (minced)

1-inch ginger (grated)

2 green chilies (optional, chopped)

1 tsp cumin seeds

1 tsp turmeric powder

1 ½ tsp coriander powder

1 tsp garam masala

1 tsp red chili powder (optional)

1 tsp cumin powder

1 tsp chole masala (optional)

Salt to taste

2 tbsp oil or ghee

Fresh coriander leaves for garnish

Lemon wedges for serving


Instructions:

1. Prepare the Chickpeas:

If using dried chickpeas, pressure cook the soaked chickpeas with 3 cups of water and a pinch of salt for about 20-25 minutes or until soft. If using canned chickpeas, drain and rinse thoroughly.



2. Prepare the Base:

Heat oil or ghee in a large pan over medium heat. Add cumin seeds and allow them to splutter.

Add finely chopped onions and sauté until golden brown.

Add ginger, garlic, and green chilies, and cook for another minute.



3. Add Spices and Tomatoes:

Stir in the turmeric, coriander powder, cumin powder, red chili powder, and chole masala (if using). Mix well.

Add the tomato puree and cook until the oil separates and the sauce thickens (about 5-7 minutes).



4. Add Chickpeas and Kale:

Add the cooked chickpeas to the tomato mixture. Stir to combine and add some water (around 1/2 to 1 cup) to adjust consistency.

Let it simmer for 10 minutes, allowing the flavors to blend.

Add the chopped kale and cook for another 5 minutes until the kale wilts and blends into the curry.



5. Final Touch:

Sprinkle garam masala and mix well. Adjust salt and spice levels if needed.

Garnish with fresh coriander leaves.



6. Serve:

Serve hot with rice, naan, or roti, along with lemon wedges for a tangy kick.
