Cauliflower Potato recipe
A classic Indian dish made with potatoes (aloo) and cauliflower (gobhi).
Ingredients:
2 cups cauliflower florets
2 medium potatoes, peeled and diced
2 tablespoons oil (vegetable or mustard oil)
1 teaspoon cumin seeds
1 onion, finely chopped
2 tomatoes, chopped
1-2 green chilies, chopped (optional)
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
Instructions:
1. Prepare the vegetables: Wash and cut the cauliflower into small florets. Peel and dice the potatoes.
2. Blanch the cauliflower (optional): To reduce cooking time, you can blanch the cauliflower in hot water for about 5 minutes, then drain and set aside.
3. Heat the oil: In a pan, heat oil on medium flame. Add cumin seeds and let them crackle.
4. Sauté the onions: Add the chopped onions and cook until they turn golden brown.
5. Add ginger-garlic paste: Cook for about a minute until the raw smell disappears.
6. Add tomatoes and spices: Add the chopped tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and the oil starts separating.
7. Add the potatoes and cauliflower: Mix well with the masala. Cover the pan and cook on low heat, stirring occasionally.
8. Cook until tender: Let the vegetables cook for about 15-20 minutes or until the potatoes and cauliflower are tender.
9. Finish with garam masala: Sprinkle garam masala and mix well.
10. Garnish and serve: Garnish with fresh coriander leaves and serve hot with roti or rice.
