Bhindi Onion Recipe
(A simple and delicious stir-fry of okra and onions)
Ingredients:
250g bhindi (okra), washed and chopped into 1-2 inch pieces
2 medium onions, thinly sliced
2 green chilies, slit (optional)
1 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/2 teaspoon garam masala
1/2 teaspoon amchur (dry mango powder)
Salt, to taste
2 tablespoons oil
Fresh coriander leaves for garnish (optional)
Instructions:
1. Prepare the Bhindi:
Wash the bhindi (okra) thoroughly and pat dry with a kitchen towel. Make sure it's completely dry to avoid sliminess.
Cut the bhindi into 1-2 inch pieces.
2. Sauté the Bhindi:
Heat 1 tablespoon of oil in a pan over medium heat.
Add the chopped bhindi and sauté for 8-10 minutes until it turns slightly crispy and loses its sliminess.
Remove the sautéed bhindi from the pan and set it aside.
3. Cook the Onions:
In the same pan, add the remaining 1 tablespoon of oil.
Add cumin seeds and let them crackle.
Add the sliced onions and green chilies, and sauté until the onions become soft and slightly golden.
4. Add Spices:
Stir in the turmeric powder, coriander powder, red chili powder, and salt.
Mix well and cook for another 2 minutes until the spices are well combined with the onions.
5. Combine Bhindi and Onion:
Add the sautéed bhindi to the onion mixture and stir well to combine.
Cook for 5-7 minutes on low heat, stirring occasionally, so that the bhindi absorbs the flavors of the spices.
6. Finish the Dish:
Sprinkle garam masala and amchur powder (for a tangy taste).
Stir everything well and cook for another 1-2 minutes.
7. Serve:
Garnish with fresh coriander leaves (optional) and serve hot with roti, chapati, or rice.
