Besan Curry Recipe
Besan Curry (Gram Flour Curry) Recipe
This is a simple and flavorful curry made from besan (gram flour), which is popular in many parts of India.
Ingredients:
1/2 cup besan (gram flour)
1 large onion (finely chopped)
2 tomatoes (pureed)
1-2 green chilies (slit)
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon garam masala
1 teaspoon coriander powder
1/2 teaspoon cumin powder
1 tablespoon ginger-garlic paste
2 tablespoons oil
1/4 cup yogurt (optional)
2-3 cups water (adjust consistency)
Fresh coriander leaves (for garnish)
Salt to taste
Instructions:
1. Prepare Besan Balls or Dumplings (Optional):
Mix the besan with a pinch of salt and little water to make a thick paste. You can shape this into small balls and fry them to use as dumplings in the curry or keep the besan as a smooth slurry.
2. Cook the Base:
Heat oil in a pan. Add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions and sauté until golden brown.
Add ginger-garlic paste and green chilies. Sauté until the raw smell goes away.
3. Add Tomatoes:
Add tomato puree and cook until the oil starts to separate from the masala.
4. Spice It Up:
Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook for 2-3 minutes.
5. Add Besan:
If you're not using fried besan balls, gradually add besan while continuously stirring to avoid lumps.
Keep stirring for a couple of minutes to cook the besan.
6. Add Water and Simmer:
Add 2-3 cups of water (depending on the consistency you like) and stir well.
Bring the mixture to a boil, and then simmer on low heat for 10-15 minutes, stirring occasionally.
7. Add Yogurt (Optional):
If you prefer a slightly tangy flavor, you can whisk in yogurt at this stage. Make sure to whisk it separately before adding to avoid curdling.
8. Finish with Garam Masala:
Add garam masala and mix well.
9. Garnish:
Turn off the heat and garnish with fresh coriander leaves.
Serve:
Besan curry can be served with steamed rice, roti, or naan. Enjoy!
